Ingredients

Dough (Outer Layer)

  • 2 cup maida
  • 4 tbsp oil ya ghee
  • ½ tsp namak
  • Thoda ajwain
  • Paani as needed

Filling (Stuffing)

  • 4 boiled aloo
  • ½ cup matar
  • 2 hari mirch chopped
  • 1 tsp adrak chopped
  • ½ tsp jeera
  • ½ tsp garam masala
  • ½ tsp lal mirch
  • ½ tsp amchur
  • Namak taste ke hisaab se
  • Hara dhaniya
  • 1 tbsp oil

Step 1: Dough Ready Karein

Ek bowl mein maida, namak, ajwain aur oil daal kar ache se mix karein.
Ab thoda-thoda paani daal kar tight dough bana lein.
Dough ko 20 minute ke liye cover karke rest par rakh dein.


Step 2: Stuffing Banayein

Pan mein oil garam karein.
Jeera, hari mirch aur adrak daalein.
Ab matar aur mashed aloo add karein.

Saare masale daal kar 2-3 minute bhunein.
Last mein hara dhaniya mix karein aur stuffing thandi hone dein.


Step 3: Samosa Shape Dein

Dough ki medium size balls bana lein.
Oval shape mein bel kar beech se cut karein.

Ek part ko cone shape dein aur stuffing fill karein.
Edges ko paani laga kar seal kar dein.


Step 4: Fry Karein

Kadhai mein medium heat par oil garam karein.
Samosas ko low-medium flame par golden aur crispy hone tak fry karein.
